Healthy sweet potato jam recipe ingredients:
- 1.1 lb (500 g) sweet potato
- 1/2 lemon (juice)
- 1 clove
- 10 oz. (300 g) sugar or substitute for sugar
- 10 tablespoons (200 ml) water
- 1 teaspoon vanilla extract
- pinch cinnamon
Peel and cook sweet potato in water with lemon juice and clove to soften and crash it with hand blender.
Cook sugar in 10 tablespoons (200 ml) of water to melt and add sweet potato with vanilla in it.
Stir for about 25 minutes to thicken and, in the end, add pinch of cinnamon in it.
Pour hot jam in clean and warm jar.
Sweet potato is very healthy for diabetics as well as cinnamon, so if you use substitute for sugar, it will be one of delicious diabetic jam recipes.
